My first attempt at caribbean cooking!

Ingredients:

2 chicken breasts

Jerk Marinade:

Jerk Chicken 1

2 spring onions, finely chopped
2 small bird-eye chillies (optional) - or Scotch bonnet chillies if you want to keep it Caribbean
1 teaspoon of ginger
1 tablespoon of thyme
50ml of cider vinegar
2 tablespoons of honey
1 teaspoon allspice
half teaspoon ground cinnamon
1 tablespoon olive oil
salt and pepper

Potato Wedges:

3 large potatoes
lots of olive oile
generous splash of lime juice

How to:

1. Put all the jerk marinade ingredients together into a blender and blend into a paste.

2. Cut the chicken breast into strips and leave to marinate in the fridge for a few hours, covered. Preheat the oven to 200 degrees.

3. Peel and quarter the potatoes and boil until 3/4 ready.

4. Put potatoes in an oven dish and smother generously with olive oil and lime juice.

5. Heat up the olive oil in a large pan on the hob and, once chicken has marinated, stir fry.

6. Put together and bon appetite.
