Welcome to the group! My penne in red wine and red pepper sauce is a good staple. Have a hunt around the tags to the right. I love vegetarian food, so will find out a few good ones for you,

Hey. Thanks alot you guys for the warm welcome(GilraenH) and the recipe for the lasagne. I'll almost certainly be giving the lasagne dish a try. Sounds mouth-watering! :-)
I tried the lasagne recipe posted by FalconryFriendsBlog, and I must say I was pleasantly suprised at the outcome. It was simply MAGNIFICIENT! I made quite a large batch of it. I now have it for lunch and dinner !

How about a nice vegetarian lasagne?
Ingredients: quantities are not important .. just a matter of personal taste. I make batch loads and freeze it.
Green pepper
Red pepper
Courgette
Mushrooms
Aubergine
Onions
Garlic
Tin of tomatoes (fresh are better)
Tomato puree
Vegetable stock cube
Mixed herbs (fresh are better)
Paprika
Salt and pepper
Strips of fresh lasagne
Chop all the vegetables up fine (really fine) .. again, this is a matter of taste.
Fry the onion and garlic in a little olive oil until just starting to brown. Add the Peppers and continue to fry (lowish heat) turning regularly so nothing burns for around 5 minutes. Then add all the other vegetables turning occassionally. Leave for a few minutes (this depends on quantity and because I do lots at a time it takes a while to turn it all in order to start the cooking process). Add the tomatoes, and a little tomatoe puree (for consistency), add the stockcube, mixed herbs, paprika (around a tablespoon), and the salt and pepper. Leave to simmer for around 15 minutes.
Make a basic white sauce, then add some cheese (your choice). When I lived in England I used a combination of Mature English cheddar, Red Leicester and parmesan (not traditional at all. Keep some cheese back for the topping.
Start layering a dish with the vegetables, add strips of lasagne, then the cheese sauce. Two of three layers are usually enough (depends on your dish) finishing with the cheese sauce. Top with the cheese you put aside and put the lot in an oven (around 200 C) for 45 minutes or until brown ... I leave mine until it's crispy. when ready, take it out of the oven and leave it to stand for 30 minutes .. it should stay hot and it makes it easier to serve. I often make this the day before as it tastes much nicer the following day.
